  • "Always read any recipe "three" times before cooking."

Thai Chicken Pizza

 

 

 

Spicy Peanut Sauce:

  • 1/2 C  peanut butter ( smooth or crunchy)
  • 1/2 C  hoisin sauce
  • 1 T  honey
  • 2 tsp.  red wine vinegar
  • 2 tsp.  minced garlic
  • 2 tsp.  minced ginger
  • 2 T  roasted sesame oil
  • 1 tsp.  chili sauce or red chili flakes
  • 1 T  oyster sauce
  • 2 T  water

 

Thai Chicken:

  • 10-12 oz. chicken breast
  • EVOO
  • salt & pepper TT (to taste)

 

For Pizza:

  • 2  store bought pizza dough (Boboli) or from your favorite pizzeria
  • 2 C  shredded mozzarella cheese
  • 1  bunch scallions cut diagonally
  • 1/2 C  bean sprouts
  • 1/4 C  shredded carrots
  • 2 T  chopped peanuts
  • 2-4 T  chopped  fresh cilantro

 

Preheat oven to 400 degrees with pizza stone on middle oven rack.

 

To make peanut sauce:

 

Combine all ingredients in a sauce pot over medium heat.  Bring sauce to a boil.  Stir well.  Boil for one minute then turn off heat

 

To make chicken:

 

Cook chicken over grill or in a frying pan for about 3-4 minutes each side, depending on thickness of chicken.  DO NOT OVER COOK because chicken will continue to cook when you bake the pizza.  Set aside until cooled.

 

To make pizza:

 

Oven should already be preheated!  Spread spicy peanut sauce over the pizza dough.  Now place the chicken pieces, scallions, bean sprouts, carrots, cilantro and mozzarella cheese.  Place pizza on pizza stone and cook for 15-20 minutes or longer if you like it dark and crispy, like me.
